8" rims would be better, 7" is too narrow for a 275/60 tire. If you go any wider on the tires you may run into problems. Rubbing the fender or wheel well. You can always roll the fender lip, make sure you get the correct back set if you go with a wider wheel. You may not have a problem but I think 275 is widest tire that is pretty much guaranteed to fit.
215 on the front. I'm not a fan of skinny front tires, I know some people like them. I'm running 245/60/14s all the way around, stock rims, and they fill up the opening pretty good. My car is a big block though and I think the front my sit a little lower than yours. I also have a set 275/60/15s for the rear on 8" rims. Personally I wouldn't want anything bigger than that but that's just my preference.
