Default 69 Chevy Chevelle

Hello everyone. I'm interested in starting a 69 Chevelle Pro-Touring project, but I was curious about a few things. I've been a car fan all of my life, but I'm not knowledgeable about the ins and outs of certain aspects regarding automotive engineering.
1. I'm curious to know the differences between the newer model LS engines vs. the big block engines?
2. What are the differences between EFI and carbureted?
3. What are the differences between 9", 10", 12" etc rear ends? I'm really clueless on the characteristics of what a rear end does.
4. Chassis? Roadshop recently came out with a full chassis for the A body (Chevelle) cars as did Chassisworks (Chris Alston). What are the differences between the 2? Or stick with the stock frame?
5. Suspension? I've looked at multiple vendors for the suspension set up and 3 really stick out. RideTech, Detroit Speed, & Roadshop.
